I am currently making small changes to a layout and noticed something about the undo/redo stack: Apparently, even layer visibility changes (such as hiding a specific layer) are recorded in the stack.
Is there a way to turn that off such that only "real" changes to the layout are undone/redone?

you're actually the first one mentioning that as an issue.
In fact when you view the layer list as some "editable" item it's natural to include it into the Undo/Redo stack. Please keep in mind that the layer list can be modified in manifold and complex ways (i.e. sorting/grouping) so having undo capbilities is essiential.
But I agree that may be confusing. Right now, there is no option to exclude the layer list operations from the unod/redo. But I'll take that as a suggestion.
If you need to switch between different "views" you may consider using "tabs" in the layer list - these allow to switch between different setups and this is not subject to undo/redo.
